  • 3-4 medium zucchini, diced
  • 2 tbsp olive oil
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/8 tsp cayenne pepper
  • ~1/4 tsp salt and pepper, to taste
  • Step 1 Preheat oven to 425 degrees F.
  • Step 2 In a bowl, mix zucchini, olive oil, chili powder, garlic powder, cayenne pepper, and salt/pepper.
  • Step 3 Spread on baking sheet and roast for 25 minutes, or until browned.
